Maple Spiced Pumpkin
Time: 10 mins hands-on, 40 minutes cooking
Serves: 4
Ingredients
500g Kent pumpkin, cut into thick slices
½ large red onion, cut into wedges
¼ cup extra virgin olive oil
¼ cup maple syrup
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp cloves
½ bunch sage leaves, torn
1 heaped tbs pine nuts
40g goat’s cheese, crumbled
Method
1. Preheat oven to 220 degrees Celsius and line a baking tray with baking paper. Arrange pumpkin and onion on tray.
2. In a bowl, combine oil, syrup and spices and pour over vegetables. Scatter sage leaves and pine nuts over the top and bake for 40-45 minutes, or until pumpkin is cooked through.
3. Crumble goats cheese over the top and serve immediately.
