Homemade Baked Beans

Time: 30 minutes

Serves: 4-6



1 tbs olive oil

1 brown onion, finely diced

1 garlic clove, crushed

1 punnet cherry tomatoes, halved

1 x 140g tub tomato paste

2 x 400g tins no added salt crushed tomatoes

2 x 400g tins no added salt four bean mix, drained and rinsed

1 tsp ground coriander

1 tsp dried oregano

1 tsp ground cumin

Cracked black pepper

Chili flakes, optional




1. Heat olive oil over a medium-high heat in a medium-sized pot. Add onion and sauté for 4-5 minutes, or until translucent. Add garlic and cook for a further minute.

2. Add cherry tomatoes and cook for 3-4 minutes, or until starting to blister. Add tomato paste, crushed tomatoes, beans and spices and stir to combine. 

3. Reduce the heat to low-medium and cook for 20 minutes, or until thickened. 

4. Serve immediately or store in an air-tight container in the fridge.
