Choc Bliss Balls
Time: 30 minutes
Makes: 12 balls
Ingredients:
160g dried dates
85g shredded coconut
35g raw unsalted almonds
30g raw unsalted cashews
1 tbs melted honey
1 tbs cocoa powder
1/2 cup desiccated coconut
Method:
1. Place dates in a bowl and cover in boiling water, then leave to soak for 5 minutes. Discard water and blitz in a food processor until finely diced.
2. Add shredded coconut, nuts, honey and cocoa powder and blitz for one minute, or until well combined. You may need to scrape down the sides of the food processor a few times.
3. Take one tablespoon of mixture at a time and roll into a ball, then toss in desiccated coconut. Leave in the refrigerator for at least an hour to firm up before serving. Store in an air-tight container in the fridge.
