Mango, Lime and Coconut Chia Pudding

Time: 30 minutes hands-on + 1 hour chilling

½ cup chia seeds

Flesh of 2 mangos

165mL can light coconut cream

1 cup skim milk

2 tbs maple syrup

1 tsp vanilla

Zest and juice of 1 lime

½ cup fine desiccated coconut

Reduced fat Greek yoghurt, to serve

Mint leaves, to garnish


1.     Place flesh of 1.5 mangoes, coconut cream, milk, maple syrup and vanilla in a food processor and blitz until smooth.

2.     In a large mixing bowl, combine chia seeds, coconut and lime juice and zest. Pour over mango mixture and whisk to combine. Place in refrigerator for 15 minutes.

3.     Remove mixture from the refrigerator, whisk again and divide over 6-8 small glasses. Chill for 1 hour.

4.     Serve with a dollop of yoghurt, fresh mango and mint.
